Well today's tip of the day is going to be with Golden Delicious apples.
I like to do tips on apples once in awhile. Sure it's not apple season, but there's plenty of apples into the market. They've all been in cold storagepicked in August and September, all the way through mid Octoberput in huge rooms, the oxygen sucked out, and kept at about 36°. They actually put the apples to sleep.
Golden Delicious have always been one of my favorites because they look nice, and they have a mild sweet flavor to 'em that's out of this world; still one of the most popular of all the apple varieties for that reason. Let's talk about selection.
When you buy them, see this right here? Look at the beautiful color it has; that dark yellow color is so important. Sometimes a little bit of brown specks makes them even sweeter, but make sure they are nice and firm. If they are soft they're going to be mealy and you don't want that.
Like I say all the time, apples look beautiful in the bowl on the countertop, or on the tabletop, but they need to be stored in the refrigerator, especially the Golden Delicious. If you store them on the counter they will become mealy and mushy; keep them nice and cold so you can enjoy sweet, crisp Golden Delicious apples.
Golden Delicious apples are loaded with carbohydrates and other vitamins and minerals our bodies need, so go out and enjoy them.
Apple Pancakes with Maple Apple Sauce
Serves 4
Pancakes:
1 + cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons granulated sugar
1/4 teaspoon nutmeg
1/3 teaspoon baking soda
1 egg
3 tablespoons butter, melted
1/4 teaspoon vanilla
1 cup milk
1 cup apples, grated
Maple-Apple Sauce:
2 large apples, peeled, cored, and diced
2 teaspoons butter
1/4 cup maple syrup
1/8 cup dark corn syrup
Dash of salt
1) For pancakes, combine flour, baking powder, salt, sugar, and nutmeg in mixing bowl. In a separate bowl, mix baking soda, egg, butter, vanilla, and milk. Combine both mixtures stirring only until blended. Fold in grated apple. Bake on hot, lightly greased griddle. When batter is full of holes, turn to brown on other side. Turn pancakes only once while cooking.
2) For sauce, melt butter in a nonstick skillet over medium-high heat. Add apples and sauté until just brown, about 2 to 3 minutes. Add maple and corn syrup to apples and stir gently. Let cook another 2 to 3 minutes or until mixture thickens. Serve with Apple Pancakes.
