Tony Tantillo: Ugli Fruit

  Well this week's tip is going to be with one of the ugliest citrus you'll ever see; it's also called UGLI FRUIT. It's from Jamaica. It's like a Jamaican tangelo, but let me tell you something, don't' judge a book by its cover, do not judge produce by its appearance.

When you cut Ugli Fruit in half, or you peel it, what's inside there is far from ugly. It's beautiful, it's sweet, and it is so juicy, but a lot of people don't buy it cause they see Ugli Fruit and they say, "I'm not buying it." Give it a try if you've never tried it.

When you select your Ugli Fruit what you want to do—oh here's a beautiful one right here—you want to make sure it has a beautiful color all the way around, like a light orange color all the way around almost like a tangelo. Heavy for its size, that means less skin although there is still a lot of skin, but there will be more juice.

When you bring the Ugli Fruit home don't hide them in the refrigerator although you might want to. What you want to do simply is store them on the counter.

Look at 'em because what's inside the Ugli Fruit is beautiful, and loaded with nutritional value; Vitamin A, Vitamin C, folic acid, and dietary fiber. It tastes great and they are good for us.


Melissa's Caribbean Pork Casserole with Ugli Fruit
Serves 4 – 6

3 tablespoons sherry
1½ pounds pork trimmed and diced
1½ tablespoons oil
8 shallots peeled
4 ounces button mushrooms, wiped
¼ cup flour
1½ cups chicken broth
1 medium Ugli Fruit peeled and cut into segments
Salt to your taste
Freshly ground black pepper to your taste
1 Bay Leaves

1. Marinate the meat in the sherry for 2 hours.

2. Heat the oil in a saucepan and gently fry the pork for 3-4 minutes. Add the shallots and mushrooms and cook for another 2 minutes. Sprinkle on the flour and cook for 1 minute. Add the broth and seasonings. Gently simmer covered for about 1½ hours, or until tender. Half way through cooking, add the Ugli Fruit segments.

3. Garnish with fresh herbs and serve with cooked noodles or other pasta.
