Sabrina's Cafe: Fathers Day Steak Recipes

PHILADELPHIA (CBS 3) ― Father's Day Surprise Recipes:

Grilled Hanger Steak with Orange - Honey Chipotle Marinade

Grilled Corn on the Cob with Parmesan & Butter 

Fingerling Potatoes with Grilled Red Onions in Balsamic Vinaigrette

 

**Grilled Hanger Steak 12oz.

 

Description:

Located between 12th & 13th Rib on Steer

Tender & Low fat

 **Option; Rib eye or New York Strip

 

Dry Rub Seasoning:


1 Teaspoon Salt

1 Teaspoon Black Pepper

1 Teaspoon Chili Powder

1 Tablespoon Garlic

1 Tablespoon Shallot

 

Dry Rub Procedure: Toss Ingredients in Mixing Bowl; Prepare for Grilling, Set for 10 min.

 

Marinade Procedure:


1 Cup Orange Juice

1/4 Cup Honey

 2 oz. Can Chipotle Smoked Peppers

 **Liquid Only; Save Peppers for Garnish

 

Cooking Procedure:


Begin Grilling Steak for 3 min. Each Side

Use Grill Brush for Dipping Marinade

Brush on Marinade Periodically until your Choice


Temperature

 

Each Side:


Rare for 2 min.

Medium Rare for 3 min.

Medium for 4 min.

Well Done  for 5 - 6 min.

**Grilled Corn on the Cob with Parmesan & Butter

 

Procedure : Clean Hair; Contain Husk

Soak in 2 Cups of Water & 2 Tablespoons of Sugar (Each Corn) **Soak 20 min.

Remove form Water; Open Husk; Brush Butter & Sprinkle Parmesan

Close Husk & Roll in Aluminum Foil

 Begin Grilling (4 min. Each Side)

 

**Fingerling Potatoes & Grilled Red Onions 

   

- 10 Potatoes (Rinse in Water)

- 2 Red Onions (1/2 inch Slices)

 

Seasonings:

2 Tablespoons Salt

1/2 Tablespoon Black Pepper

1 Tablespoon Garlic (Crushed)

1 Tablespoon Shallots (Chopped)

1/2 Cup Olive Oil

1/2 Cup Balsamic Vinegar

2 Tablespoons Fresh Herbs (ex. Thyme, Oregano, Rosemary)

1 Lemon Squeezed

 

Procedure:


Toss in Large Bowl

Low Flame on Grill; Place on Grill; Grill until Tender

Tips: Reserve Marinade for Fresh Toss Salad
