Delights Roasted Pumpkin Soup
Ingredients
1 medium size whole pumpkin
1 cup of heavy crème
1 cup of half and half
2 teaspoons of cinnamon
1 teaspoon o f nutmeg
½ cup of brown sugar
½ lb of butter
½ teaspoon of salt
¼ cup of vegetable oil
Salt to taste
Preheat oven to 350 degrees
Peel the whole entire pumpkin, and cut into large diced
pieces
Slightly coat pumpkin with vegetable oil. Roast pumpkin until slightly golden brown and
soft approximately 10-15 minutes.
Place heavy crème, half and half, cinnamon, nutmeg, brown
sugar, and butter in a sauce pan, and let simmer for about 10 minutes. Add in pumpkin and let simmer for 5
additional minutes.
Mix all ingredients in blender until smooth, and add salt to
taste.
