Peanut Butter Shortbreads
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup creamy peanut butter
2 cups all-purpose flour
Directions:
Preheat oven to 300°F. In a bowl, combine all the ingredients with your fingers until mixture resembles coarse meal. Press the mixture into an ungreased 8" round pan. With a fork, prick decorative wedges in the dough. Bake for about 1 hour, or until very lightly browned. Cut into wedges while warm. Makes 16 wedge-shaped cookies.
Crunchy Peanut Butter Cups
½ c. butter
½ c. peanut butter, (smooth or crunchy)
1c. confectioners sugar
2/3 c. graham cracker crumbs
Directions:
Melt the butter, add the peanut butter into the pan.
Stir in the confectioners sugar.
Remove from heat and stir in graham crumbs.
Line cups with chocolate. Spoon in filling.
Press into cups.
Chill ½ hour.
Cap with melted chocolate.
